This naturally processed lot is balanced and smooth. Sweet notes of milk chocolate, caramel, and red apple. Low acidity makes it work perfectly as an espresso or filter brew.

Roberta teamed up with our partners FAF in 2019. Felipe Croce is managing the FAF family business which operates as a Center of Competence for sustainable Specialty Coffee in Brazil.

Roberta studied agronomy and combines her technical knowledge with the family traditions to produce with regenerative practices. She participates in the FAF Future Farmers project, which supports the transition to regenerative systems through the use of biological inputs and management practices that prioritise soil health, biodiversity, and ecological balance.

Across the farm they grow a number of different varietals including Catuaí, Mundo Novo, and Red Bourbon, cultivated at altitudes ranging from 1,000 to 1,100m.

This coffee was carefully picked by hand, then dried on raised african beds. Drying in cherries is not only more environmental friendly (no water needed); it is also a great way for the cherry to pass on extra flavour to the coffee bean. All cherries are dried to a moisture content of 11.5% - after that, the dried outer fruit - cascara - is removed mechanically.
