This lot uses a distinct adaptation of the natural process coffee method, taking full advantage of the dry harvest season. Instead of harvesting ripe cherries immediately, they are left to dry naturally while still attached to the branch, allowing moisture to reduce gradually and sweetness to intensify.

The dry climate minimises the risk of defects during this stage, preserving the quality of the fruit before harvesting begins. This carefully managed, multi-stage approach reflects a meticulous attention to detail and results in a coffee with exceptional clarity, a velvety mouthfeel and a naturally sweet profile with remarkably low acidity.
