Mount Caconde is blessed with natural springs and a coffee culture that was perfected over generations of passionate growers. It was around 2007 that Gertrude dos Santos bought herself an exercise bike at home. Her goal was to improve her physical fitness because she started working with our partners FAF to bring her farmland to the highest possible Specialty Coffee Level. Based on her success, her younger brothers Joao Hamilton and Ivan improved their own coffee farms. The rest is history: The dos Santos siblings pushed Specialty Coffee above and beyond in the Sao Paolo region.

For our first Brazilian filter coffee of the year, we have chosen a naturally processed lot from Ivan & Rose dos Santos. Expect notes of Belgian Chocolate and Pecan Pie.

About The Farm

Based on the success of his siblings Gertrudes and Joao Hamilton, Ivan joined the partnership with FAF (Fazenda Ambiental Fortaleza or Environmental Fortress Farm) to change to sustainable, quality driven coffee farming. Fast forward and a whole region has been transformed.

Named after the Brazilian Roadrunner which is native to the area, Ivan and Roses called their farm: Sitio Seriema. We first tasted their coffees in 2014. It changed our perception of Brazilian coffees. No longer we thought was Brazil producing "commodity specialty grades". We suddenly had fruit flavours and acidity that reminded us of East African coffees!

Our relationship with Ivan and Rose has grown over the years and we have started investing in upgrades at their farm. With improved water treatment facilities the farm now fully cleans all water before releasing it back into the environment. Working with FAF, this project is now spreading across the region: helping to deliver a more sustainable model of coffee production.

The Process

Ripe cherries are picked by hand to be naturally processed and dried on the farm. The whole cherry is transferred to raised African beds to slowly dry in the sun. The warmth of the region provides the perfect conditions for high quality natural processing that helps to impart sweet depth to the beans.
