We have been exploring green coffee infusions for a while, but there was always one challenge: finding a recipe that actually tastes good.
For this recipe, we brew ground green coffee beans from Marcos Limongi's farm with fresh grapefruit juice and dried mint using an AeroPress. The result is a refreshing infusion with bright citrus notes, fresh herbal character, and a smooth mouthfeel.
Green coffee contains naturally occurring compounds such as chlorogenic acids and other antioxidants. This recipe offers a completely different way to experience coffee before the roasting process transforms its flavour and aroma.
5g ground green coffee
12g grapefruit juice
4 dried mint leaves
145ml hot filtered water

Add the ground green coffee, grapefruit juice, and dried mint leaves to an inverted AeroPress.
Add 145ml of hot filtered water and give everything a gentle stir.
Close the AeroPress and allow the infusion to brew for 4 minutes.
Carefully turn the AeroPress onto a pitcher or mug and press down slowly.
Allow the drink to cool slightly before enjoying its smooth mouthfeel, bright grapefruit character, and refreshing mint notes.
